Whisk the egg whites with the baking powder and salt, then add the sugar and mix until they become like meringue. The yolks are boiled with oil and mixed with the egg whites and then flour and cocoa are added. I poured the composition in a tray lined with baking paper. After about 40 minutes, take it out and let it cool.
In a saucepan mix the sugar with the cherries, until it melts, about 10 minutes and let it cool. I boiled the gelatin with 2 tablespoons of water, leave it for 5-10 minutes, then it dissolves on low heat. Pour over the cherries and add whipped cream.
prepare syrup: water with sugar melt and pour a little rum essence.
In the meantime, we are preparing glaze: break the chocolate into pieces, add the whipped cream and let it melt over low heat until the composition becomes homogeneous.
In a saucepan I put the sugar, melted it and added walnuts. I let it cool and then chopped it.
I syruped the top, poured the cream, then the icing, and finally the caramelized walnut.
