A hearty sausage casserole with potatoes, red and green peppers and onions. It's the perfect winter midweek meal!

  • 2 teaspoons olive oil
  • 900g fresh Italian sausages, cut into 5cm pieces
  • 4 tablespoons olive oil
  • 4 large potatoes, peeled and thickly sliced
  • 2 large green peppers, seeded and cut into wedges
  • 2 large red peppers, seeded and cut into wedges
  • 3 large onions, cut into wedges
  • 125ml white wine
  • 125ml chicken stock
  • 1 teaspoon dried Italian herbs
  • salt and pepper to taste

  1. Preheat oven to 200 C / Gas 6.
  2. Heat 2 teaspoons olive oil in a large frying pan over medium heat; cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish. Pour 4 tablespoons of olive oil into the frying pan and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil. Cook and stir the green and red peppers and onions in the hot frying pan until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish. Pour wine and chicken stock over the vegetables and sausage and sprinkle with Italian herb seasoning, salt and pepper. Gently stir the sausage, potatoes and vegetables together.
  3. Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

This was PHENOMINAL!!! One of the best recipes that I have tried from this site, hands down. Super simple to put together and the flavor was just awesome. I made this exactly as written aside from omitting the red peppers because I didn't have any and adding in a few cloves of whole garlic. I used hot Italian sausage. My little guy wiped his plate clean, and so did we, lol! This is a definate 10 star recipe that I will be making VERY OFTEN! Thanks for sharing.-27 Jul 2010

Very tasty. I did halve the recipe since there's only my husband and myself here and also only used chicken stock since I didn't have any white wine. It was very delicious, colorful with the peppers, etc. and smelled great while it was baking. Thanks for the recipe, Beccabo73.-11 May 2010
