  • 300g rolled oats
  • 125g vanilla protein powder
  • 1/4 teaspoon bicarbonate of soda
  • 1 pinch salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 teaspoon vanilla extract
  • 250g unsweetened apple sauce
  • 1 large egg
  • 4 tablespoons raisins (optional)

  1. Grind oats in a food processor until the consistency of flour. Combine the oat flour with protein powder, bicarb, salt and cinnamon. Set aside.
  2. Whisk together the apple sauce, egg and vanilla. Add to the dry ingredients and mix well. Fold in the raisins, if using.
  3. Line a baking tray with parchment and drop the cookie dough onto the tray. For large cookies, use a ping-pong sized ball of dough for each cookie.
  4. Bake in a preheated 190 C / Gas 5 oven for 6 to 8 minutes. Don't overbake. Leave for 5 minutes to cool on the tray, then cool completely on a wire rack.

Tips

The dough will be a little watery, don't worry its supposed to be like that. You can remove the protein powder, but add equivalent of oats. As written each cookie contains 112 kcal, 13g carbs, 1g fat, 8g protein, 9g fibre.

How to Make Coconut Oatmeal Protein Cookies

I know a lot of people who don&rsquot like to make cookies because they think the process is tedious and messy. These cookies are done in a food processor so you can have them ready for the oven in just five minutes! Once they&rsquore in the oven they only take 6 minutes to bake. Plus, your mess is contained to the food processor bowl which you can put right in the dishwasher.

Normally, I break my recipes down into steps, but there are really only two steps for these coconut oatmeal protein cookies:

You put all of the dry ingredients (oats, baking powder, salt, brown sugar, protein powder, and coconut flakes) in the food processor and pulse into a powder. Then you add the coconut oil and milk and pulse until the ingredients are well combined.

All you have to do after that is spoon the dough onto a cookie sheet and bake!

When they come out of the oven, you should let them cool for a few minutes. I let them cool completely and store them in an airtight container with a piece of bread to keep them from drying out. Then I grab one or two (usually two) when I need an afternoon energy boost.

These coconut oat protein cookies really do work well for me. I&rsquom always more focused and on my game when I have eaten them for breakfast (if I&rsquom rushing) or mid-morning snack. This recipe usually makes about 10 cookies for me. I don&rsquot know exactly how much the dough makes because I can&rsquot ever keep myself from eating the dough! No worries about raw egg you guys, it&rsquos vegan too (unless you use cow&rsquos milk in place of coconut milk).


The Secret to Healthy "No-Bake" Cookies

There are tons of recipes out there for no-bake cookies, but most of them contain a base of a ton of sugar, butter, milk and cocoa melted together with peanut butter and oats.

Undeniably a delicious combination but there is always a way to swap out some of the more processed ingredients for healthier alternatives like:

  • Instead of granulated sugar use honey or maple syrup, you can use smaller amounts and substitute other sweet alternative ingredients like mashed bananas or dates for natural sweetness
  • Swap out the butter and use coconut oil or cocoa butter
  • Drop the dairy and use a plant-based dairy alternative like almond milk, pea protein milk, or coconut milk.
  • Use other grains and seeds alongside the oats such as quinoa, puffed rice, and/or chia seeds, hemp seeds etc.

This no-bake peanut butter oatmeal cookie recipe has all the healthy swaps plus the addition of protein powder 1 cookie has 10 grams of protein!

The key to getting the perfect healthy no-bake cook is having the appropriate ratio of filler ingredients like oats, seeds, and other grains, to your stabilizer, typically the coconut oil, peanut butter, and chocolate chips.

The stabilizing ingredients (the ones you will melt and mix with all the oats and filler ingredients) will help hold the cookies together once they cool down to room temperature. This is one of the reasons you will need to refrigerate your cookies, to help them cool down and hold their shape!

These cookies taste very similar to regular oatmeal raisin cookies &ndash they&rsquore spiced with cinnamon, have a nice chewy texture and a lovely hint of sweetness. The difference comes from the fact that these cookies contain no processed flour or sugar, just the natural kind found in fruit. There&rsquos also more protein &mdash obviously, you are reading Protein Pow! If you use gluten-free oats and a vegan protein powder, they&rsquore also vegan and gluten-free. If you can&rsquot stand raisins, you can leave them out and have plain cinnamon oatmeal protein cookies or if you have a sweet tooth, you can add in chocolate chips.

Ingredients

1 1/4 cup Rolled Oats
1/4 cup Coconut Flakes
1/4 cup Whey Protein Powder (See Note 1)
1/2 tbsp Chia Seeds
1 1/2 tsp Cinnamon
1/2 tsp Salt
1/2 cup Raisins
2 Banana (mashed)
1/4 cup Applesauce (unsweetened)
1/4 cup Coconut Oil
1 tsp Vanilla Extract

1. Preheat oven to 350°. Line baking sheet with parchment paper. In a large bowl, combine rolled oats, shredded coconut, protein powder, chia seeds, cinnamon and salt.

2. Add raisins and stir until everything is evenly mixed. In another bowl, combine coconut oil, mashed banana, applesauce and vanilla.

3. Pour wet ingredients over dry ingredients and stir until well combined.

4. Form into balls and flatten slightly into a cookie shape with your hands.

5. Bake for 18-20 minutes or until the edges of the cookies are golden brown.
